A huge thank you to our wonderful customers, many of whom have been with us for the entirety of the 17 years since we started our business! 

We wish you a very happy, safe and healthy Christmas and hope that the new 2024 year brings you everything you may wish for. 

We've had a very busy year and look forward to enjoying some time to unwind with our friends, children and grandchildren over the Christmas break.

Here in the beautiful Southwest of Western Australia we're anticipating the hottest summer on record, so we're giving our beautiful cottage garden lots of attention at the moment to help it get through extended temperatures above 40 degrees celsius.  Bushfires are predicted for our little part of the world, so we're also having to prepare for those should they come near.  As my dear old father used to say...'don't worry...it may never happen...but always be prepared for whatever life may throw at you'.  We are doing this...preparing!

On that note, I'm off to do some final Christmas preparation!

NATURALLY LEAVENED SOURDOUGH BREAD STARTER

HOW TO MAKE THE LEAVE (STARTER)

DAY 1:

  1. 80g of good quality high protein (13%) Bakers Flour.  (I buy Brero White Bakers Flour and Brero Rye online from Basic Ingredients in Queensland, and they are excellent).  (If you use just regular plain flour it usually doesn’t have sufficient protein for the wild yeast to feed on.  If you don’t have much choice, you can add a couple of teaspoons of honey at each feed to help keep the wild yeast in the starter strong).
  1. 80g Lukewarm Water

(Not straight from the tap as the chlorine will kill the yeast.  Bottled water or distilled water will work best.  Never use cold water as it might kill your Starter)

  1. Mix ingredients well and place in a lidded bowl that has a vent or cover with plastic wrap that has a couple of holes punched in the top so it is not airtight.  (The yeast and lactobacillus needs some air to live).

DAY 2:

Feed 80g flour and 80g water

DAY 3:

Split your batch equally into 2 bowls and feed 110g  flour and 110g water to each batch

DAY 4:

Add 110g flour and 110g water to each batch

Day 5:

Give a super feed of 200g flour and 200g water to each bowl

NB   Try to feed your starter at the same time every day. 

Around 2 - 3 PM is good as it gives it time to rise earlier in the day on Baking Day.  The cooler the weather the longer it takes to rise.  You will work out your own schedule.

If your starter looks a bit grey and has liquid (hooch) collecting on top, this is the liquid alcohol given off as the wild yeast ferments.  The presence isn’t a sign that your starter is in danger.  It does indicate that your starter is hungry and needs to be fed.  You can just stir the hooch into your starter or pour it off, feed your starter and it will be happy again.

 A healthy starter has a strong yeasty sour smell.  If you see mould growing on your starter discard it and begin a new starter.  You shouldn’t have any problem if you ensure that all of your utensils, containers and hands are clean. 

DAY 6:   BAKING DAY!

 You will need: 

  1. Scale to weigh your ingredients. I use a digital scale.
  2. A bread proofing basket/banneton (I prefer the round 23cm rattan ones in the larger size. You can buy on eBay.
  3. Large Glass, China or Plastic mixing bowl (don’t use metal).
  4. A bread lame or sharp knife for perfect scoring
  5. Large French Oven or large round heavy casserole dish with lid. Caste Iron is best.   I have 2 Chasseur French Ovens that I bought on sale from Kitchen Warehouse.  But there are cheaper options.  You just need something that is cast iron and can withstand a hot oven (235 Celsius).  I prefer to make round loaves, but that is just my personal preference. 
  6. Baking Paper (A good quality strong one).
  7. Plastic wrap

 

Before you start:   Starter can take 10-14 hours to rise before it is ready to bake with.

The starter takes longer to rise in cold weather.  In Winter I often feed my starter at around 9:00pm leave it on the kitchen bench overnight and then begin the pre-baking process  at around 10am to bake at around 5:30pm.   

In Summer the starter rises more quickly so I often start my starter at around 10:00pm, begin the pre-baking process at around 9:00am and bake at around 2:30-3:00pm. 

On Baking Day your Starter should have doubled its size.  It is best to use the starter when it has risen to its highest before it has begun to collapse.

You can check if it is ready by dropping a teaspoon of starter into a glass bowl of tepid water.  If it floats, it is good to go.  If it sinks it has either not had sufficient time to properly rise, or it has been left too long in which case you’ll need to make another batch and try again the following day.

 

BAKING DAY (Takes about 5-7 broken hours)

300g            starter

600g             water (lukewarm distilled/purified – no chlorine)

2 tsp              salt

1kg                Plain Bakers Flour (I use Basic Ingredients White  Brero Flour.  I vary my mix sometimes when I want a nutty flavour and make up a mix of 900g Brero White Flour and 100g of Brero Rye Flour). *Please note that all flour isn’t the same.  A recipe that works well in Australia may not work the same made in another country. 

1tbs              honey

2tsp               Olive Oil (pour into bowl to help stop the dough from sticking.  The oil also helps prevent the dough from sticking to your hands when kneading.  It is lovely kneaded through your dough, and it is healthy!

  1. In a large bowl mix the starter, water and salt and a tbsp of honey with a whisk, spoon, or electric mixer. (I use a Kenwood with dough hook). Then gradually add the 1kg of flour, stirring it in with a spoon or mixer.  If using a spoon, you may need to flour your hands and hand mix until all of the flour has been mixed in.
  1. Turn out the dough ball onto a lightly floured countertop or large board....yes...it will be very moist!
  1. Knead the dough gently for 5 minutes, shape into a ball, and place into a bowl greased with olive oil , cover with gladwrap for one hour.
  1. After one hour, repeat step 3.
  1. Knead dough for 5 minutes, divide in half, knead and stretch into a ball and place the ball into a deep bowl or a proofing basket if you have one. Cover with plastic wrap and leave to rise for 3 hours. 
  1. ½ hour before baking, place your casserole dish or French Oven into your oven and preheat to 235 degrees. 

I7.       Turn  your dough ball onto baking paper, score/cut an X across the top with a sharp serrated knife or a bread lame (helps the loaf to rise), pick up your loaf using the baking paper corners and place into French Oven.    (If you have a large oven and two French Ovens, you can cook both loaves together). 

Cook with lid on for 30-35 minutes.  Remove Lid and cook for another 15 minutes if you prefer a deeper brown colour.  (I prefer to leave the lid on until the loaf is lightly browned as it keeps the loaf moist). 

Turn onto a cooling rack .  You can tap your bread to check that it is cooked…it makes a hollow sound when tapped.  Now…be good!  Don’t cut until it is cool. 

Now cook the other loaf!

WHAT TO DO WITH THE REMAINING STARTER?

 Save 100g of the starter.  I put mine in the fridge.   With a new starter it is best to feed it twice a week.  Keep the weight of the 3 main ingredients the same. You’d feed a 100g starter with 100g water and 100g flour.  When your starter becomes stronger and more mature, you can keep it in the fridge and feed it once a week, or even twice  a month!  If you’re going away, you can freeze your starter in a ziplock bag for up to a year. Just defrost it when you get home and give it a feed.  Just remember to give your starter a super feed the day before you use it and remember that you will use 300g of starter for baking and need to retain at least 100g for your next bake. 

Each time you feed your Starter, take off what you want to keep (I take 200g and feed mine 200g of water and 200g of flour and 1tsp honey so that I have enough starter to make 2 loaves).

Some people discard their starter, or they use the excess to make crumpets, waffles, or pizza dough.

 

HOW TO TEST IF YOUR STARTER IS READY TO BAKE WITH:

Depending on the room temperature the time can vary.

I put starter into a clear dish and use a marker to mark the starter level.  It usually doubles in 10 - 14 hours. 

The best way to check if it is ready to use is to put some room temperature or tepid water into a glass, and using a teaspoon take a tiny bit of starter and drop it gently onto the water.  If it floats the starter is ready.  If it sinks the starter isn’t ready yet or has already begun to go down, in which case discard some and feed it again...always equal quantities of starter, flour and water.

White Brero Flour and Brero Rye Flour - You can purchase online from Basic Ingredients www.basicingredients.com.au  (is the only place in Australia (Queensland) that has it and it is cheapest to buy 10 x 1kg bags at a time as you get a good discount.  You can freeze the flour indefinitely.  Sometimes they offer free shipping to certain areas and will let you know when they have specials.

Heavy iron French Oven - Kitchen Warehouse online has them on sale.  You need the 27 - 30cm size.  Mine is a Chasseur, but any large heavy lidded iron pot would do.

Proofing baskets - eBay or Basic Ingredients.  (But...a calico cloth in a small to medium sized mixing bowl will also do).

 *I am grateful to Sarah Fielke who generously shared her sourdough recipe. Sarah has a couple of videos on her Instagram page that show how she kneads and shapes her loaves. 

Over time I have tweaked the recipe and baking method a little, but I still give Sarah full credit for getting me started.    

My starter, that is named Seymour, is now 4 years old and is very robust and happy.  Some sourdough starters are over a hundred years old and are handed down from generation to generation.  As your starter ages over the years it will develop a flavour that is unique.

Interesting facts:

People who are gluten sensitive may be able to tolerate sourdough bread without experiencing any issues because the fermentation process changes the gluten so it is more easily tolerated. 

Live starters have been used for thousands of years.  Modern bakeries only began backing using different methods and adding yeast instead of naturally fermented leaven to bread a bit more than a hundred years ago. 

Sourdough bread is a high protein bread made from all natural ingredients.

How to purchase continuous lengths and individual Fat Quarters

We are preparing to update our website to speed it up and simplify purchasing.

We are presently working on removing the listing variants and removing the Fat Quarter and Metre options, as these seem to confuse some buyers.  Instead we are selling the fabric by 25cm (1/4m) increments.  This way people can more easily purchase the metres/yardage they require.  For example:

25cm x 2 = 1/2 metre

25cm x 3 = .75 metre

25cm x 4 = 1 metre

25cm x 5 - 1.25 metres

25cm x 6 = 1.5 metres

25cm x 7 = 1.75 metres

25cm x 8 = 2 metres.............and so on

Should a customer wish to receive a single Fat Quarter instead of a 25cm strip they can let us know by either leaving a note at checkout or sending us a message using our store's 'contact' feature.

We will be moving Fat Quarters to our Quilters Pre-Cuts section and most will be sold in bundles.

Store Name Change to Tuppence's Aussie Fabrics

Regretfully we have had to change the name of our store from Tuppy's Aussie Fabrics to Tuppence's Aussie Fabrics.

The reason for the name change is that since we moved from Queensland to Western Australia 2 years ago we have been enduring constant online abuse via posts to our Facebook page, Messenger and email.  Apparently the word 'tuppy' is considered to be offensive in the local Noongar language and they believed that we were being disrespectful of their culture. (The actual word, according to the dictionary found on the Curtin University's website, there are no words beginning with the letter 'T' in the Noongar language and the word our abusers are referring to is translated, as 'djapi'.  The Noongar had no written language, so to the ear, when spoken phonetically 'djapi' sounds like 'tuppy').  At no time had we intended to offend or disrespect the local Noongar people, so as a demonstration of goodwill we have changed our name.

In most of the English speaking world, Tuppy is a nickname frequently given to little girls as a term of endearment.  It is also the name given to me, the owner of this store, by my father.  The word, Tuppy, is the shortened form of tuppence, a 'tuppeny' coin...or two pennies...the form of currency used before we changed to the decimal currency in the 1960's.

We hope that we can now manage our store without anymore trauma or drama and that the online keyboard warrior trolls leave us in peace.

We will now move forward.  We are truly blessed to have the 3 ingredients essential for a happy life...someone to love...something to do...and something to look forward to.

Up this beautiful garden path and to the left is a small cottage, and that cottage now houses Tuppy's Aussie Fabrics!  It is such a pleasure breathing in the scent of lavender, rosemary, roses and other flowers in bloom whilst climbing those stone steps to go to work!
We have moved from hot and humid subtropical Queensland to an almost Mediterranean climate in the beautiful small country town of Donnybrook in South Western Australia.  We moved to be closer to our two daughters and their families who have a farm not far from us, Skating Goose Farm (visit them on Facebook) and also thought we'd 'downsize' from the large home and garden we'd occupied in Queensland.  But our plan to 'downsize' turned out to be an 'upsize'. However, we couldn't resist this 1/2 acre of gorgeous garden which is home to tiny colourful honey eaters and wrens and listening to their cheerful chatter all day long makes us smile. But the raucous, destructive parrots that visit aren't so welcome because they strip the olives off our olive trees, bite the tips off the rose bushes, and generally make a mess. There is another smaller cottage for my sewing studio as well as the larger cottage that now houses our fabric and yarn business. 
We are processing all orders within 1 - 2 business days of receipt and even though we are mailing from rural Western Australia the delivery time for orders is just about the same as it was when we mailed from Queensland.

HOW TO MAKE FLIP FLOPS/SLIPPERS

How fabulous would flip flop slippers like these be as a Mothers Day gift?
I've made several pairs of these slippers for myself and love them.  Not only did I use mine at home, but I also made a little bag to carry a pair in my handbag for those house parties where you need to remove your shoes at the front door, or after you've stood for hours and your shoes are 'killing' you.
Easy to make!
1.  Shape & Size:  Trace around the sole of your favourite sandals.
2.  Cut:
  •         2 Upper sole fabric
  •         4 Iron on single or double sided Matilda's fusible foam/fleece  (in store)
  •         2 Upholstery suede  soles - synthetic or genuine
  •         4 contrasting 4" strips of fabric - cut full width of fabric. (for top bows)
  •         4 strips 2" wide of bias tape for edge of slippers.
3.  Assembly:
  •        Stitch the contrasting strips together to make 2 tubes 
  •        Leave a 1" opening in middle of strip for turning
  •        stitch across each end, turn & press
  •        Iron upper sole fabric to fusible foam/fleece
  •        Iron bottom sole to fusible foam/fleece
  •        Stitch one side of bias to right side of upper & lower soles 
  •        Fold unstitched/free sided of bias to wrong side of soles
  •        Stitch bias in place on each sole piece.
  •        Place one tie strip between the upper and lower sole layers.
  •        Place upper & lower soles wrong sides together 
  •        Iron to fuse if using fusible foam/fleece
  •        Secure upper and lower soles together by stitching over the bias several times

4.   Tie the strips into a bow over the top of your foot.
5.    Voila!  you now have some colourful flip flops/slippers!

VIEWING A LISTING:  Double click on listing to view a listing.  Magnification tools allow you to closely inspect items, and a ruler helps you to calculate print/design size.

CURRENCY:  To change from Australian Dollars (AUD) to your preferred currency, go to top right of page and click on AUD (or if using mobile phone, the 3 bars).  When you click on AUD a dropdown list of currencies will appear from which you can choose.

SEARCH BY COLOUR, BRAND & THEME:  You can search our store by colour, brand or theme.  For example, if you want Liberty fabric in blue floral, you can find by clicking on the SHOP BY bar at top right of page that reveals a dropdown list, or by using the SEARCH ICON and typing 'liberty blue floral' into the *search bar and all of those fabrics will be pulled up for you.  *The Search Bar can be found by clicking on the little magnifying glass icon at top right of page)

FABRIC CUTS:   When you open a listing, click on the 'Please Select Size' box and a dropdown list will appear.  Most fabric is sold in different lengths or cuts:  25cm, Fat Quarter and Metre.  Imperial measurements are also shown.  If, for example, you wish to purchase 1/2metre, choose 2 x 25cm strips or 2 FQ and fabric will be sent as a single length.  You will also notice the available quantities of each cut.  Always ask if what you're after isn't available, as we may have more...

QUILTERS PRE-CUTS:  We also sell quilters pre-cut bundles such as FQ Bundles, Charm Packs, Layer Cakes and Jelly Rolls.

OUR FABRICS:  We have focused on building a comprehensive range of certain brands:  Authentic Australian Aboriginal Fabrics by M&S Textiles Australia, Ella Blue Fabrics Australia, Liberty London Tana Lawn, traditional Japanese prints, and some of the Kaffe Fassett Collective.  Please note that Free Spirit Fabrics that printed fabric by leading designers such as Kaffe Fasset, Phil Jacobs, Amy Butler, etc., recently closed its doors.  It is my understanding that a new distributor will be taking over and eventually supply of these beautiful fabrics will become available again).

YARN:  We have a selection of gorgeous yarns by Noro, Debbie Bliss and Prestige Yarns.  If you love to dye your own yarn, you can't go past the selection of blends by Prestige Yarns.  Please note that the distributor for Debbie Bliss recently closed.  We are sure that a new distributor will be found soon and these beautiful yarns will become available once more.  We are also looking at another beautiful brand, so watch this space....

Shipping Cost - Yarn:  Unless we sell these as bulk lots our shipping calculator has difficulty accurately computing shipping for single balls and multiple orders.  We therefore ask that customers message us with their order using the CONTACT button so we can send a custom invoice that has correct postage.  But generally...within Australia...we can send up to six 50g balls/skeins in a 500g satchel that costs $8.50AU.  To send same order to CAN/US/JAP/NZ costs $24.00AU and to UK/EU $29.00AU. To send ten 50g balls/skeins costs about twice as much because of bulk.  Shipping does include tracking.

Welcome to Autumn in Australia!

After enduring the hottest Summer in recorded history here in Queensland, Australia, the arrival of Autumn and the promise of cooler weather is sooooo welcome!

As most of you in the Northern Hemisphere are enjoying beautiful Spring weather and are putting your sewing machines and knitting needles away for the warmer months, crafters here in the Southern Hemisphere are beginning to think of indoor Winter activities such sewing, knitting and crochet.   So ..... we need to get cracking and fill some of our still empty shelves with a yummy selection of textiles and yarns for our soon-to-be-busy-crafting Australian and New Zealand customers.

The sweltering heat over Summer has certainly put us way behind in photographing, weighing, describing, and listing products, so please drop back occasionally as the cooler weather encourages more progress in this regard. (We only opened this new store on 13th of January and the initial setup is proving to be a huge, but fun, undertaking).

NORO YARN....Over the coming weeks we will be adding more beautiful NORO yarn to our shelves.   (For those of you unfamiliar with Noro, there is a story about it within each listing). I have actually used Noro for weaving as well as for knitting and crochet.

(POSTAGE FOR YARN. Because yarn is bulky....just a single ball becomes a parcel and in Australia it costs $8.50 to send 1 - 6  balls that weigh 50g each.  So....if you're interested in placing a yarn order, please message us first and we'll tell you how much postage will be.  We offer postage discounts to Australian Buyers and we always refund any postage overage if our shipping calculator has overcharge).

LIBERTY TANA LAWN - We are expecting a shipment of wonderful new prints and colourways in Liberty Classics, and some old favourites appear in the Liberty Classic Revival range.  These are scheduled to arrive at the end of this month.  

Classic Revival prints are a 'one-of' designs that have been unavailable for years.  (I'm hoping to receive some Ianthe (photo above), Caesar and Hera as well as some other old favourites). So, if you wish to add some of these gorgeous fabrics, you'll need to be fast. We could only get our hands on a few bolts of these highly collectable fabrics because Liberty was sold out of them almost immediately.

Spring/Summer 2017 Seasonal Release - 'Castaway' is now available. This is such a fun collection of prints featuring  reef fish, corals, tropical fruit, birds of paradise and the highly sought after Message in a Bottle (above) design.  Seasonal releases are limited edition and the fabrics are highly collectable.

The Little Land of Rhyme is a Special Release for children based on familiar nursery rhymes.  The collection is due for official release in the Northern Hemisphere on 1 July 2017.  Whilst images of this collection (already released in Australia) are 'under wraps' in the Northern Hemisphere until July, we already have this collection available for purchase and immediate delivery.  If you're interested in viewing this range, please message us using our store's CONTACT feature and we will give you access to the images and also allow you to purchase.

Just a couple of little tips:    

CHANGING CURRENCY:  At the top of the page you'll see AUD.  Click on this and a dropdown list will appear from which you can select the currency of your choice.

YOU'RE SELECTING A STORE CATEGORY 'SQUARE' BUT NOTHING APPEARS?  Okay....if you are using a handheld device this happens and can make you believe there are no listings to see.  So...click on the 4 little blue bars.  Once you do this fabrics and new selections will appear.

FOR FAST SEARCH:  Nothing is worse than having to plough through hundreds of fabrics to try and find the colour and print you're after.  If, for example, you are looking for Liberty fabric but only want pink, use the search bar at the top of the page and just type in 'liberty pink'.  When you do this, all pink Liberty fabric will appear. You can do this with any of the fabric or yarn brands and themes.  Want stripes?  type in 'red stripes', and so on.

JUST ARRIVED!

CASTAWAY is Liberty's new Seasonal Release for Spring/Sumer 2017.  Unlike the Classics range, Seasonal Releases are Limited Edition, so you will need to be fast if you want to collect these fabrics.  Castaway is an entrancing new collection of prints which take cues from the tropical diversity of the Balearic Islands.  Beautiful designs inspired by tropical reefs, islands, and life in the tropics are the main feature.  This is a truly fresh and different collection and will be on our shelves some time in next couple of weeks.

THE LITTLE LAND OF RHYME:  We have Liberty's special limited edition release for children, THE LITTLE LAND OF RHYME in stock.  But....Liberty has asked us not to show photos on our website until after the collection is released in the Northern Hemisphere on July 1 2017.  So, if you're interested in viewing our range, please message us by using the contact 'button' provided and we'll email the photos to you on the condition that you don't publish those photos online.  If you then wish to purchase any of the range, please message us with your order and we'll do a private custom listing for you to purchase.

We are finally open for business! But in no way are our shelves fully stocked!

We want your shopping experience to be a fabulous one, but we know there will most likely be a few little startup 'glitches', so we beg your patience while we sort these out.

Please rest assured that you can shop in privacy and safety in this store.  We use the Shopify platform that has a Five Star security rating.  We also use the secure SS1 rated Shopify Checkout as well as PayPal.  (Your credit card details are at no time visible to us).

If you see that an item you wanted is SOLD OUT, it is very likely that we have the product on hand, but haven't edited the photos and updated the listing yet. Please don't hesitate to ask. (We're having to process about 6,000 photos and write about 2,000 item descriptions, and we're way behind).

We have a huge amount of stock waiting to be listed, and we are expecting more to arrive within the coming weeks! So, please continue to drop by from time to time to see what's new.
